Welcome to my series, Foodie Friday! Earlier I posted some healthy breakfast ideas and I am deciding to continue sharing recipes but, this time, I am shifting my focus towards healthy lunch ideas! Thinking of healthy lunch ideas is difficult when on the run. That’s why combining meal prep and simplicity helps you stay accountable.
I will be doing a weekly series where I post a healthy recipe each week in honor of Wellness Wednesday. I find that having inspiration can be beneficial when looking to live a healthier lifestyle. Salads are a great place to start because they are so versatile. This week, I am sharing a recipe called: The Summer Salad

🥗Lettuce of choice (I used arugula)
🥗Avocado
🥗Cucumber
🥗Roasted red pepper flakes
🥗Hard Boiled Egg
Top with:
🥗Apple Cider Vinegar (ACV)
🥗Olive oil
🥗Cilantro & seasonings of choice ✨
Salads are a great way to incorporate many nutrients and tailor the recipe to your desires. I tend to enjoy more savory salads but I add a date for some additional nutrients and bring in some sweetness, if that is what I am craving! This can be stored in a mason jar using this technique to avoid soggy lettuce or can be stored in a container with dressing in a separate container.
I always encourage eating balanced meals (something I am constantly working on) to keep stable blood sugar levels and avoid a crash. I chose avocado for my healthy fat, cucumber for my vegetable, egg for my protein, and some roasted red pepper flakes for a bit of extra flavor. Dressings are usually full of yucky ingredients so I try to avoid that by keeping it simple with Apple Cider vinegar, olive oil, and some seasonings that I prefer.
